I haven't done a food post in a while, so I thought I better catch up, let you know whats been going on! So, I am still eating 100% gluten free, but the hubby eats what he wants. :)
It's been a challenge switching over, but I have found that its actually pretty easy to stay gluten free, as long as I stay away from BREAD! oh, that terrible bread. Just this morning, when I was walking past Cub Foods on my way back to my car from my workout, this wonderful bread smell came wafting out of someone's grocery bag. Oh my goodness, all I wanted to do was run into Cub and buy a TON of bread and eat it all. Yes, I know, I'm a pig. It just smelled SOOOOOO good! But, I resisted. :)
And I have been able to make some other YUMMY food, even if its not quite bread. So hang on for the ride!!!!!
Last night I made a super yummy stir fry out of pork marinated in a soy sauce, ginger, garlic and honey sauce. I cooked up the pork in the marinade, and then threw in the veggies (carrots, peas, zucchini, and onions) and let it all simmer. Then I heated up some water, threw my rice noodles into the water and let those soften up. Once I strained my finished noodles, I mixed up the veggie/meat mix with the noodles and threw a little bit of extra soy sauce on top and WALLAH! Delicious stir fry! It was super good, even the hubbs thought so :)
Last week, I made ravioli. Yes, GLUTEN FREE ravioli from SCRATCH! Thank you very much. Here is my dough, all mixed and kneaded but not too much! I actually had just finished kneading in my xanthum gum. Then, I let if sit for a half hour...
Then I rolled out the dough - very sticky and messy - and plopped my pumpkin/brown sugar mix in little piles and folded the dough over on top of itself. I made sure to push down around all the squash, which resulted in the pumpkin to bleed out a bit...
And eventually, after about 45 minutes, I had all my ravioli finished. By the way, this is only about half the raviolis. Also, I don't have a nice neat little ravioli cutter, so these aren't as pretty as they could be, but HEY, I MADE RAVIOLI from SCRATCH!
So then I popped them into my boiling water and waited for them to rise to the top and ...
TADAA! Delicious sweet pumpkin ravioli! Oh, I forgot, I also made this butter, brown sugar and vinegar sauce, dunked each ravioli in it and then when everything was plated, dumped the whole pot of buttery goodness all over the ravioli. That's probably what made it taste good :)
I also made a delicious blueberry pie for dessert. The crust is made out of almond flour, oil, and milk. Yep, that's it! and then I made the blueberry filling out of tapioca starch, blueberries (duh), sugar, and water. Super easy and super yummy!
We also decided to do a camping trip... in our backyard! Hurray! So, there's our tent set up, with our grill ready to do some hardcore gluten free grilling and the fire twigs ready to feed our roaring fire.
And of course, handsome Michael getting our dinner all ready. It was nice not being the one in charge of dinner for one night. :) He did amazingly grilling up our asparagus, scallops, and hotdogs. Great combination huh? Oh, and we had french fries too, but I did those in the oven. We had SO MUCH FUN camping in our backyard. Except that we didn't put the rain guard up, and in the middle of the night it started raining on us. Fun times. :) I highly recommend camping in your backyard during a busy weekend when you can't get away. Its super fun, affordable, and your house is right next door if you need to get anything. ;)
